3 tablespoons fresh lemon juice

1/4 teaspoon ground cumin)
2–4 tablespoons cold water, as needed

Instructions:
Preheat oven to 400°F.
Place the shallots and entire garlic bulb on a sheet of foil and drizzle with 1 tablespoon olive oil. Wrap it all up loosely in the foil. Roast for 25–30 minutes, until soft and caramelized.
Squeeze roasted garlic from skins and transfer to a food processor. Add the roasted shallots.
Add chickpeas, tahini, lemon juice, salt, cumin, and remaining olive oil.
Blend until smooth, adding cold water 1 tablespoon at a time if needed until creamy and light. Taste and adjust lemon or salt as needed.
Transfer to a bowl and drizzle with olive oil. Garnish if desired.
